THE KING OF THE CHOCOLATE OF MEXICO, LUIS ROBLEDO, CROWNED AS LATIN AMERICA’S BEST PASTRY CHEF 2019

The famous Mexican pastry chef and chocolate maker Luis Robledo has been chosen Latin America’s Best Pastry Chef 2019, sponsored by the República del Cacao. The award was announced at the seventh edition of the Latin America's 50 Best Restaurants 2019 awards ceremony,  in Buenos Aires, Argentina - a pinnacle of regional cuisine, which brings together chefs, gastronomic, food lovers and world-class media.

Robledo's world-class technique is exhibited at Tout Chocolat in Mexico City, where its precision and talent lend itself to the creation of perfectly sculpted cakes and chocolates, full of unique infusions such as tonka beans, mezcal, roasted coriander and pine nuts . Tout Chocolat, a paradise of artisanal chocolate, currently has four branches in Mexico City in the districts of Santa Fe, Perisur and the flagship store in the Hipódromo-Condesa neighborhood.

"Throughout my career, cocoa has been a true source of inspiration, not only for its versatility, but also for its role in the rich history of Mexico," Robledo said. “I feel very honored to be recognized as Latin America's Best Pastry Chef 2019, which was made possible thanks to the support of my colleagues and the restaurateurs of Mexico and Latin America, and of joining the iconic chefs who preceded me in a region with a growing devotion to the art of pastry and chocolate. ”

Arnaud Monmarché, B2B director of República del Cacao commented “We congratulate Luis Robledo with whom we are pleased to share several projects together. Being part of the Latin America’s 50 Best Restaurants shows us that there is a generation of talented chefs challenging the way they use their materials: seeking origin, traceability and purpose in each of their creations. We try to support these needs through the use of our chocolate, making visible a diverse Latin America ”

Upon receiving this award, Robledo joins an elite group of world-class pastry chefs, including the 2018 winner Jesús Escalera de La Postrería in Guadalajara, the 2017 winner Saiko Izawa of São Paulo, the 2016 winner Gustavo Saez from Santiago, to the 2015 winner Astrid Gutsche from Lima, and to the 2014 winner Osvaldo Gross de Esperanza, Santa Fe, Argentina.

For República del Cacao, participating in this award is an opportunity to discover Latin American cuisine by the creative hands of avant-garde chefs; its relationship with local ingredients and culinary methodologies that highlight unique flavors of the region.
