Santiago Cueva: Chef & Chocolatier

As part of our 'Notes from Latin America', we will be featuring the people who make up the La República family. In our first interview, we speak to Santiago Cueva - global chef, pastry chef and chocolatier.

"I am passionate about raw materials and working with what nature offers. I love to interpret these ingredients, and transform them into something delicious, something that respects their flavours. For me, less is more. 

"I trained in Austria, Spain and Ecuador - however I was truly educated in chocolate by working with República del Cacao. I operate on a large palette of tastes, from Asian and Mediterranean flavours to exotic Ecuadorian fruits - from our famous white 'patas muyo' cacao to our Andean 'mortiño' berry. 

"República del Cacao's chocolate is the expression of my culture and learnings - as an interpretation of my surroundings. I feel part of the República del Cacao community - as much as the farmers, the factory operators and the foodies who enjoy the final chocolate products, all over the world."
