SAIKO IZAWA from A Casa do Porco, BEST PASTRY CHEF from 2017 LATIN AMERICA’S 50 BEST RESTAURANTS

Last year Latin America’s 50 Best Restaurants named Saiko Izawa, from A Casa do Porco in São Paulo, as Latin America’s Best Pastry Chef 2017, sponsored by República del Cacao.

Saiko seeks to fuse cultures, whether Japanese, Brazilian or from further afield, in her inventive creations. Her signature style includes applying savoury ingredients such as basil to her desserts, achieving a satisfying finish to a meal. Born in Tokyo, Izawa moved with her family to Brazil as a teenager and later applied her experience of both cultures to her cooking. Since 2015, she has been the pastry chef of São Paulo restaurant A Casa do Porco, which rose to No.8 on the list of Latin America’s 50 Best Restaurants 2017, working alongside chef-owner Jefferson Rueda. Their fruitful partnership has seen Izawa earn a reputation not only as a leading talent in her country, but in Latin America as a whole.
