Varieties

To be able to produce a fine aroma chocolate, our staff focused their efforts in different types of developments depending on the zone of origin. So it is that through research and sensorial evaluation teams so called “Tasting Teams”, we were able to select the varieties for this first stage. Undoubtedly, every single type of our REPUBLICA DEL CACAO chocolate fully identifies the unique scent and flavor of each zone or origin.


 

The province of Los Ríos

The province of Los Ríos is located in the Ecuadorian coastal area, though it does not have an ocean outlet. Its outstanding fertile soil greatly contributes to a significant agricultural production. The wide hydrographic basin that crosses its fields gives its name to this province. Its dry and fresh summer weather differs from that of the normally rainy and humid winter season.

The flavor sensation of this special chocolate variety begins with the initial bite, offering a slow meltdown followed by a lasting finish. Its sweet flowery aroma reminds of a walk through citrus blossomed fields.

The province of Manabí

Manabí has nearly 350 kilometers of beaches along the Pacific Ocean shore. Manta, the most important fishing port in the country is located in this province. Its extremely fertile land has turned this province into an agricultural potential for tropical weather products growing, such as coffee, banana, corn, rice, cotton and of course cacao. Besides, coconut, pineapple and orange are also cultivated in the zone.

The flavor in this chocolate develops slowly, with a soft initial aroma at the first bite with further fruity aromas surrounded by delicate acid and sweet releases as chocolate melts down in the mouth provoking a lengthy finish, reminiscent of a late harvest wine.

The province of El Oro

This small province located at the southern region of the country has also a coastal area bordering Peruvian territory. Its name comes from the existence of gold mines. Its particular weather and topography are specially suited for tropical fruits crops. Banana crops have worldwide recognition, making its capital Machala, one of the most important cities in the country, also known as the "banana capital” of the world.
